Tomato sauce can be prepared easily when you cook fresh tomatoes down into a medium-thick sauce then straining out seeds and peels. You can easily find it sold in most food stores but if you truly want to enjoy genuine Italian cooking such as pasta dish, making you own tomato sauce can be really fun and rewarding.





Tomato sauce is also seasoned with spices and herbs. It is generally highly acidic but by adding carrots, you will be adding a natural sweetener to balance out the acidity. Some people suggest that adding sugar can reduce the accidity. While sugar will make the tomatos taste less acidic by masking the taste with sweetness, it doesn't really neutralize the acidity. You can also try using grated cheese such Parmesan or ricotta to reduce the acid in the tomato while adding a different flavor.

Instructions:


1. First of all, preheat the saucepan and add in the olive oi. Add in the shallots and saute them until tender but make sure not to brown them.


2. Add in the tomatoes, garlic, basil, salt and pepper. Combine and mix well then let it simmer for another 10 minutes until the sauce thickens and reduces to just about 2 cups.


3. Taste the sauce and correct the seasoning if necessary.
